Cherry Dream White Chocolate Mousse (Inspired by my favourite ice cream) of Calvin Atkinson - Recipefy

200g White Chocolate
Knob of butter
300ml double cream
1 Vanilla pod split or 1 tsp Vanilla Paste
2 tbsp Caster sugar
2 eggs separated
215g Cherries stones removed

Prep. Time → 20 min

1. Start by boiling a kettle and placing an inch of water into a pot over a medium heat bringing quickly to the boil

2. Place a bowl over the pot (preferably glass) making sure the water does not come into contact with the water

3. Break up the white chocolate and place in the bowl with the butter and keep it on the heat until it completely melts removing from the heat once this happens

4. in a large mixing bowl place the double cream, vanilla pod seeds or vanilla paste, and caster sugar and whisk until it doubles in thickness this should take about 30 seconds be really careful not to over whisk

5. Separate the eggs if you haven’t already place the whites in separate bowl and place the yolks in the cream mixture

6. Whisk the yolks into the cream until it is well mixed into the cream

7. Wash your whisk and dry quickly proceeding to whisk the whites till they form hard peaks

8. Place the melted white chocolate into the cream and mix well with a spatula (if the chocolate has started to solidify put back in the bowl on the heat with a small amount of milk till it melts again)

9. Now place the egg whites into the chocolate cream and fold into the mixture until there’s no visible trace of the whites

10. Now it’s time for my favourite part place ¾ of the cherries into the mousse and continue to fold into the mousse in order for there to be some cherries within the dessert

11. Finally place in the fridge for a good few hours (at least 3) if not overnight and place the rest of your cherries on top of the mixture just before serving
