Chicken and pasta bake
Recipe by2 large breasts of chicken (remove for vegeterian)
Chopped 1/2 an onion onion
200g cooked pasta (I used fusili)
Tin of tomatoes
Tin of sweetcorn or peas-Drained
100g grated cheddar cheese
100g grated mozzerella
2 tbsp Tomato puree
pinch of sugar (This will offset the taste of out of season tomatoes)
Salt and Pepper
Prep. Time → 20-25 min
Cook Time → 10-15 min
1. Dice chicken in to thin strips or chunks and add to a heated frying pan, fry in a little olive oil, stir until light brown and cooked in the middle. Tip cooked chicken into large oven proof dish.
2. While this is cooking boil the pasta until cooked. (follow instructions from pasta packet) Usually 10minutes
3. Also pre-heat oven to 180c (Fan assisted)
4. Then add the chopped 1/2 an onion to pan and brown for a few minute, may need a little extra oil. Keep stiring as can over cook easily.
5. Now put all ingredients in the oven dish except the ceddar cheese. Mix well until pasta is evenly coated with the mixture.
6. Now sprinke top with remaining cheese and place in the oven for 10-15 minutes. Cheese should have melted and become golden brown. Ready to serve. Enjoy.
