Chicken corn chowder *** instant pot ***
Recipe by3 lb of chicken breasts
2 lb of potatoes
1 onion
bacon to taste
1 can of corn
2-3 cups of chicken broth
1/2 cup of heavy cream
salt to taste
pepper to taste
1 Tsp tapioca flour
Prep. Time → 10 min
Cook Time → 25 min
1. peel the potatoes and cut them in small cubes
2. chop the onion
3. cut the chicken breast in small cubes
4. if the bacon is NOT cooked, cook it in the instant pot saute mode and set it aside for later
5. saute the onion using olive oil
6. add the chicken to the pot and mix/saute for 2+ minutes
7. add the corn, salt, pepper and any other spices to the mix
8. add the potatoes and the chicken broth
9. cook in the instant pot for 10 minutes
10. let the pressure be released naturally (+ 10 minutes)
11. add the tapioca flour and heavy cream to the pot
12. saute for +5 minutes
13. serve with cheese, bacon, and green onion
