Chicken pad thai - aa
Recipe by1 (16-ounce) package rice noodles
2 large eggs, beaten
1.5 pound chicken, cubed
4 cloves minced garlic
1 TBS Chili paste
2 teaspoons minced ginger (optional)
3 tablespoon honey
6 tablespoons soy sauce
6 tablespoon fish sauce
3 tablespoon rice wine (or cider) vinegar
3 tablespoon lime juice
4 scallions, sliced thin
1 cup snow peas
2 cups bean sprouts
1/2 cup peanuts, coarsely chopped, for garnish
1. Soak noodles according to packaging, until al dente.
2. Drain, set aside.
3. Heat large sauce pan (or wok) over medium-high heat.
4. Cook eggs and set aside.
5. Season chicken with salt and pepper to taste.
6. Brown in sauce pan.
7. Add garlic, chili paste, and ginger.
8. Finish cooking chicken.
9. Add soy sauce, fish sauce, vinegar, and lime juice.
10. Bring to a simmer.
11. Add noodles, vegetables, and half of peanuts.
12. Toss until well combined and noodles are cooked.
13. Remove from heat and serve, topped with remaining peanuts.
