Chicken Schezwan of Kitchen Snippets - Recipefy

1. FOR SCHEZWAN SAUCE

( FOR 3/4 CUP SAUCE)

GARLIC (FINELY CHOPPED) 1/4 CUP
GINGER (FINELY CHOPPED) 2 TBLSP
OIL 3-4 TBLSP
RED CHILLI 10-12
SOYA SAUCE 1/2 TSP
CHILLI SAUCE_ 1TSPN
TOMATO KETCHUP 1/2 TSP
SUGAR-1TSPN
SALT- TO TASTE
WATER 1/4 CUP

2. CHICKEN-8 PIECES ( BONELESS AND SKINLESS.CUT INTO BIG PIECES)
BELL PEPPER/CAPSICUM-1/4CUP (CUT INTO CUBES)
CORNFLOUR-5TBLSPN
EGG-1
SPRING ONION-1/4CUP CHOPPED
PEPPER POWDER-1TSPN
OYSTER SAUCE-1TSPN
SALT
OIL

1. Sauce preparation

2. Takeout the seeds from red chillies and soak in water for 15 mints. Grind it into a smooth paste. add a few tsp of water if necessary while grinding.In a pan add the oil and add the finely chopped ginger and garlic . Saute for few minutes till the garlic turns golden brown color. Saute in a low flame.Add the ground red chilli paste to this.Mix well and cook for 2 minutes till the oil oozes out.Add the sauces (chilli,soy and tomato ).Add 1tspn sugar mix well.Sprinkle enough salt .(keep in mind that sauces contain salt )
This can be stored in a clean bottle for 10 days in the refrigerator.

3. Chicken schezwan preparation

4. Marinate the chicken pieces with 4 tblspn cornflour,egg,pepper powder and salt for 15 mints.

5. Heat oil in a pan and shallow fry the chicken pieces till they turn crispy.remove from stove.

6. In the same pan saute chopped spring onion and bell pepper.saute till the bell pepper turns soft.then add 3-4 tblspn prepared sauce,mix weel and stir for few mints.Then add the fried chicken pieces and mix well till the chicken pieces are well coated with the sauce.At this point you can add 1 tspn oyster sauce also ( optional ).
Mix the remaining i tblpsn cornflour with 1/4 cup of water and add it to the chicken.Cover and cook in the lowest flame.
Garnish with spring onions and serve hot.

7. Notes: You can substitute the home made schezwan sauce with readymade sauce available in supermarkets.
Add the schezwan sauce to the recipe according to your spice level.
