Chilli con carne with potato wedges
Recipe by500g potato wedges
30ml olive oil
1 onion, finely chopped
2 garlic cloves, crushed
5ml dried chilli flakes
15ml ground coriander
15ml ground cumin
500g lean beef mince
400g tomatoes, chopped and peeled
15ml tomato puree
250ml water
400g red kidney beans (in a can)
salt and milled pepper
Prep. Time → 20 min
Cook Time → 60 min
1. Preheat oven to 200C
2. Cook potato wedges according to packet instructions. Set aside
3. Heat olive oil in large pan and saute onion until soft
4. Add garlic and fry for another minute then add chilli, coriander and cumin and stir well
5. Toss in meat and brown
6. Stir in chopped tomato, puree and water and mix well
7. Simmer for 45min adding more water if necessary
8. Add kidney beans and season, then cook for 15minutes
9. Serve with potato wedges
