Ingredients
- 800gm (28 oz) potatoes, diced
- Fry Light
- 1 red chilli, finely chopped
- 1tsp smoked paprika
- 113gm (4 oz) Cheddar cheese, grated**
- 2tbsp flour (7 Syns)
- 20gm coriander, chopped
- salt and freshly ground black pepper

1. Method
1. Place the potatoes in a large saucepan and cover with cold water. Bring to the boil and simmer for 10 minutes until tender. Drain.

2. Spray the pan with Fry Light and fry the chilli and paprika for 1 minute. Add the remaining ingredients and coarsely mash. Season to taste. Divide into 8 and pat into flat round cakes.

3. Heat a non stick frying pan sprayed with Fry Light and fry the potato cakes in two batches for 1-2 minutes on each side until golden. Serve with a home-made tomato salsa and leaf salad for a light lunch or starter.
