Chocolate brownies

2 eggs
240g caster sugar
100g butter
3 table spoons cocoa powder
100g self-raising
2 scoops vanilla ice cream
For the HOT CHOCOLATE SAUCE
15g cornflour
280ml milk
15g butter
50g sugar
50g dark chocolate

Cook Time → 40-45 min

1. 1. Pre heat the oven to 180°C/ 350°F/ Gas mark 4 and grease a 20cm square cake tin.

2. 2. Beat the eggs and the sugar together in a bowl. Melt the butter and beat in the cocoa powder before adding to the eggs and sugar. Sift in the flour and fold into the main mix. Pour into a lined greased cake tin. Bake for 40-45 minutes.

3. 3. Once the top is firm, cut the brownies into squares

4. For the sauce

5. 1. Mix the cornflour with a little milk.

6. 2. Boil the remaining milk, whisk in the the cormflour mixture and add the butter and sugar.

7. 3. Reboil carefully and grate the dark chocolate into the hot (but not boiling) sauce, and whisk untill smooth.

8. 4. Place a brownie square on a plate. Place one scoop of vanilla ice cream on top and drizzle with the sauce.

9. Enjoy!
