Chocolate-chocolate chip bacon cookies

6 slices hardwood-cured bacon (I like maple-cured, thick-cut), chopped or crumbled
1 1/2 cups white sugar
1 cup softened butter
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups dark chocolate chunks

1. 1. Preheat an oven to 350 degrees F.
2. Cook and drain the bacon slices. Crumble or chop.
3. Beat the sugar, butter, eggs, and vanilla extract with an electric mixer in a large bowl until smooth. Stir in flour, cocoa powder, baking soda, and salt, just until mixed. Mix in the chocolate chips and bacon. 4. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
5. Bake for 10 to 12 minutes in the preheated oven. Let stand 5 minutes before transferring to wire racks to cool completely.
