Chocolate mint brownies

Brownie
1/2c smart balance butter
1c splenda (or 1c sugar)
4 eggs
16oz sugar free chocolate syrup
1-1/2tsp vanilla extract
2/3c wheat flour
1/2tsp salt

Filling
1/2c smart balance butter
2c splenda (or 2c confectionery sugar)
2tsp cornstarch (do not add if using confectionery sugar)
1Tbs water
1/2tsp mint extract

Topping
10oz chocolate chips
1tsp mint extract
1/2c + 1Tbs smart balance butter

Prep. Time → 60 min

Cook Time → 30 min

1. Preheat oven to 350 degrees F

2. In an electric mixer bowl, cream butter and splenda until light and fluffy

3. Add eggs, one at a time, beating well after each addition

4. Beat in chocolate syrup and vanilla

5. Add flour and salt and mix well

6. Pour into a greased 9x13" baking dish

7. Bake for 30 minutes (top will still appear wet)

8. For filing, cream butter, splenda, cornstarch, water, and mint extract until fluffy

9. Once brownies have cooled COMPLETELY, spread filling over brownies

10. Refrigerate until filling sets

11. For topping, melt chocolate chips and butter in a double boiler

12. Once melt, add mint extract and stir to combine

13. Let cool for 30 minutes, stirring occasionally

14. Spread over filling and refrigerate until sets

15. Store leftovers in refrigerator
