800g mixed fruit
5 tablespoons of Brandy
2 balls steam ginger, finely chopped
50g blanched almonds, chopped
1 lemon and 1 orange zest
175g plain flour
1 teaspoon ground mixed spice
1 teaspoon ground cinamon
1/2 a teaspoon of salt
225g dark muscovado sugar
225g unsalted butter
4 medium eggs, beaten
50g ground almonds

For Icing
3 tablespoons of apricot glaze, warmed icing sugar, for dusting
455g marzipan
750g ready to roll icing

Prep. Time → 30 min

Cook Time → 2 1/2 - 3 hours min

1. 1. Preheat oven:160*C and grease a 18cm tin and line with baking paper.

2. 2. Put the mixed fruit and brandy in a large pan and heat gently for 4 minutes- trransfer to bowl, add the ginger, zest, almonds and leave to soak.

3. 3. Sift flour, spices and salt into a seperate bowl.

4. 4. In a third bowl whisk sugar and butter untill it is fluffy then gradually add the beaten eggs. Then add the flour mixture, then the fruits.

5. 5.Spoon into the prepared tin and level. Bake for 2 1/2 to 3 hours untill a skewer inserted in the middle comes out clean (cover with foil if it's getting too dark)

6. 6. Leave to cool.

7. 7. Brush the cake with the glaze and roll out the marzipan untill 0.5cm thick and lay over the cake.

8. 8. Brush with boiled. cooled water. Now roll out the icing to 1cm thick, lay over cake and trim.

9. Optional:
Add decorations to the top.
