Chunky potato and bean soup sw

- Fry Light
- 2 cloves garlic, crushed
- 1 carrot, diced
- 1 stick celery, sliced
- 600gm (1lb 5oz) waxy potatoes, e.g. Estima, peeled and diced
- 397gm (14oz) tin mixed beans, drained and rinsed
- 1½tsp dried mixed herbs
- 850ml vegetable stock, made with Vecon
- 1tbsp tomato puree (½ Syn)
- Salt and freshly ground black pepper
- 2tbsp freshly chopped parsley to garnish
1. Method
1. Heat a large saucepan sprayed with Fry Light and gently fry the garlic, carrot, celery and potatoes for 3-4 minutes.
2. Add the remaining ingredients and bring to the boil.
3. Simmer for 10-15 minutes or until the potatoes are tender. Season to taste and sprinkle with the parsley to serve.
