- 1 onion
- 2 garlic cloves
- 2 carrots
- 2 red peppers
- 8 Morrisons Eat Smart Diet pork sausages
- 4 chicken breasts
- Fry Light
- 2tbsp medium curry powder
- 12fl oz (340ml) passata
- 7fl oz (198ml) stock made with chicken Bovril
- 1-2tsp granulated sweetener
- Salt and freshly ground black pepper
1. Method
1. Prepare the ingredients; peel and finely chop the onion; crush the garlic; cut the carrots into bite-size pieces; deseed and chop the peppers; roughly chop the sausages and chicken.
2. Spray a pan with Fry Light and cook the onion, garlic, sausages, chicken and curry powder for 2-3 minutes. Stir in the carrots, peppers, passata, stock and sweetener. Bring to the boil, reduce the heat to a simmer and cook, stirring occasionally for 12-15 minutes, or until the chicken is cooked through.
2. 3. Season to taste, ladle into four warmed bowls and serve.
