Classic pimiento cheese
Recipe by
1/3 cup mayonnaise
3 tablespoons cream cheese, at room temperature
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice of apple cider vinegar
1-1/2 teaspoons dried mustard
1-1/2 teaspoons hot sauce
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons onion, finely grated
1 (12-ounce jar) diced pimiento
8 ounces extra-sharp white Cheddar cheese, coarsely shredded
8 ounces extra-sharp yellow Cheddar cheese, coarsely shredded
1. Stir together first nine ingredients in a medium bowl until smooth. Stir in onion, Fold in pimiento and cheese.
2. Cover and chill 8 to 12 hours.
3. Let stand at room temperature for 30 minutes and stir will before serving.
