Coconut pound cake
Recipe by1 cup butter
½ cup vegetable shortening
3 cups sugar
5 large eggs
3 cups all-purpose flour
½ tsp. baking powder
½ tsp. salt
1 cup milk
1 tsp. coconut flavoring
1 tsp. rum extract
Coconut Pound Cake Icing
Preheat oven to 325. Grease and flour a tube pan.
Beat together butter and shortening. Add sugar and eggs, one at a time, beating well after each addition. Sift dry ingredients together. Add dry ingredients alternately with milk. Add flavoring. Pour into tube pan. Bake for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Pour Coconut Pound Cake Icing over warm cake.
Coconut Pound Cake Icing
½ cup sugar
¼ cup water
½ tsp. almond flavoring
1. In a small saucepan, combine all ingredients. Boil for 1 minute. Brush over cake.
