Coconut rock cakes
Recipe by225g (8oz) Self Raising Flour
1/2 tsp Baking Powder
125g (4oz) Butter or Marg
125g (4oz) Caster Sugar
50g (2oz) Desicated Coconut
1 Egg
1 tbsp Milk
a few drops Vanilla Essence
Prep. Time → 10 min
Cook Time → 10 min
1. Sieve the flour and baking powder into a bowl.
2. Add the butter to the bowl and rub in.
3. Stir in the caster sugar and coconut.
4. Beat the egg.
5. Add the egg, milk and vanilla essence to the bowl to make a fairly stiff mixture.
6. Place dessert spoonfuls of the mixture on a greased baking tray allowing space for the mixture to spread.
7. Bake in the oven at 220°C (Fan 200°C), 425°F, Gas Mark 7 for 10 minutes until golden brown.
