Coronation chicken salad
Recipe by4 chicken breasts, cut into large pieces
60g low fat natural yoghurt
2 tbsp curry paste
3 cloves garlic, crushed
1 thumbsized piece ginger, grated
1 tsp garam masala
½ tsp turmeric
Juice ½ lemon
2 tbsp mayonnaise
1 tbsp natural yoghurt
½ tsp ground cumin
Juice ½ lemon
½ clove garlic, crushed
3 baby cos lettuce
½ mango, peeled and diced
2 tbsp toasted flaked almonds
Fresh coriander to garnish
Prep. Time → 10 min
Cook Time → 15 min
1. Mix the yoghurt, curry paste, garlic, ginger, lemon juice and turmeric in a large bowl and add the chicken to marinate for preferably a couple of hours.
2. Cook on a preheated griddle pan or BBQ for around 3-4 minutes per side or until cooked through, then leave to rest for a few minutes.
3. Whisk together the mayonnaise, yoghurt, lemon juice, garlic, and cumin, then dress the washed salad leaves.
4. Portion into four bowls, top with the chicken and mango then finally garnish with some almonds and fresh coriander.
