Courgette chocolate sponge

• 250 g 9 oz plain flour
• 375 g 13 oz Demerara sugar
• 100 g 4 oz best quality cocoa powder
• 2 teaspoons bicarbonate of soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 4 eggs
• 250 ml 8.75 fl oz olive oil
• 400 g 14 oz grated courgette
• 90 g 3 oz chopped walnuts

Prep. Time → 15 min

Cook Time → 60 min

1. 1. Preheat oven to 180 C / Gas 4. Grease and flour a 20 x 30 cm baking tin.
2. In a medium bowl, stir together the flour, sugar, cocoa, bicarbonate of soda, baking powder, salt, cinnamon, eggs, olive oil, and courgette mix well. Pour into the prepared tin. Sprinkle chopped nuts over the top
3. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the centre comes out clean. Serve hot with cream or custard or cold on its own.
