Ingredients
- 675gm (1½ lb) courgettes
- Fry Light
- ½ tsp cumin seeds
- ½ tsp mustard seeds
- 1 onion, thinly sliced
- 2 garlic cloves, crushed
- ¼ tsp ground turmeric
- ¼ tsp chilli powder
- 1tsp ground coriander
- 1tsp ground cumin
- ½ tsp salt
- 1tbsp tomato puree (½ Syn)
- 400gm (14oz) can chopped tomatoes
- ¼pt water
- 1tbsp chopped fresh coriander
- 1tsp garam masala

1. Method
1. Trim the ends from the courgettes then cut them evenly into 1cm / ½ in thick slices.

2. Heat a large heavy-based saucepan sprayed with Fry Light and fry the cumin and mustard seeds for 2 minutes until they begin to splutter.

3. Add the onion and garlic and fry for about 5-6 minutes.

4. Add the turmeric, chilli powder, ground coriander, cumin and salt and fry for about 2-3 minutes.

5. Add the sliced courgettes all at once, and cook for 5 minutes, stirring so that they do not burn.

6. Mix together the tomato puree and chopped tomatoes and add to the saucepan with the water. Cover and simmer for 10 minutes until the sauce thickens. Stir in the fresh coriander and garam masala, then cook for five minutes or until the courgettes are tender.
