Ingredients
- 100gm (3½ oz) dried couscous
- 100gm (3½ oz) frozen peas, cooked and chilled
- 1 small onion, finely chopped
- 3tbsp fresh lemon juice
- 2 medium tomatoes, skinned, deseeded and chopped
- 1tbsp fresh parsley
- Pinch of salt
- Freshly ground black pepper

Directions
1. Method
1. Soak the couscous in 1 litre (2 pints) of boiling water for 5 minutes.
2. Drain the couscous well and mix with the remaining ingredients. Season to taste and serve.
