Cowboy Caviar - Kathy Shannon of UML Admissions Recipe Share - Recipefy

In a large bowl mix

Regular size cans of
1 can black beans (Goya)
1 can blackeye peas (Goya)
1 can corn ( white-market basket)
1/3c chopped onion,
2/3c pepper (multiple colors) I buy already chopped near lettuce, combination of chopped onions and peppers), if not available 1/3 c of onion, 1/3 c of pepper and 1/3 c of another pepper

Mix together:
1/3 cup oil;
1/3 cup apple cider vinegar and
3-4 packets of artificial sweetener, sweet n low, stevia etc…, stevia is supposed to be the healthier choice so I used 1 ½ t of stevia....
pour over ingredients and let sit overnight

Drain the next day and serve, I like to serve with multi grain scoops

You could always use this as a side dish too

Prep. Time → 15 minues if you do niot have to cut the veggies min

Cook Time → 0 min
