Crab quiche
Recipe by1 deep dish unbaked pie crust
4 large eggs
1/2 cup whole milk
1/2 cup heavy cream or heavy whipping cream
1/4 teaspoon pepper
1 cup fresh jumbo lump crabmeat
1-1/2 cups shredded Gruyere cheese
1 teaspoon Old Bay seasoning
Dash of hot sauce
Prep. Time → 10 min
Cook Time → 70 min
1. Preheat oven to 375 degrees F and partially bake pie crust for 11 to 14 minutes. Let cool.
2. Reduce oven temperature to 350 degrees F.
3. In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat eggs, whole milk, heavy cream, and pepper together on high speed until completely combined, about 1 minute. Whisk in crabmeat, cheese, Old Bay seasoning and hot sauce.
4. Bake the quiche until the center is just about set, about 45 to 55 minutes. Don't over back. Us a pie crust shield to prevent crust edges from over browning, if necessary. Allow to cool for 15 minutes. Garnish as desired.
