Cream of broccoli soup
Recipe by
1 1/2 cups broccoli florets
3/4 cup reduced-sodium chicken broth (divided)
1 teaspoon butter or margarine
1 teaspoon all-purpose flour
1/8 teaspoon salt
1/8 teaspoon dried thyme leaves
1/8 teaspoon pepper
1/3 cup fat free half-and-half
1 tablespoons reduced-fat sour cream
Chopped fresh parsley (optional)
Caviar (optional)
1. 1. In small microwave-safe bowl combine broccoli and 1/3 cup of the broth. Micro-cook, covered, on high for 4 to 5 minutes or until very tender. Add broccoli mixture to food processor bowl or blender container. Cover and process until smooth. Set aside.
2. In small saucepan melt butter. Stir in flour, salt, thyme and pepper. Add the remaining broth and half-and-half. Cook and stir until mixture boils and thickens. Stir in vegetable mixture. Cook and stir until heated through.
3. Ladle into bowls. Top with sour cream. Garnish with parsley and caviar (if desired).
2. ***Make it a meal:
1 turkey sandwich (2 slices rye bread, 3 ounces thinly sliced turkey breast, 2 lettuce leaves, 2 thin slices tomato, and 1 tablespoon reduced-fat Thousand Island salad dressing)
1 medium red apple
and 8 ounce chai latte tea made with 2% milk
