Cream of potato and leek soup
Recipe by1 large leek, 2 medium sized onions, single cream, chicken and vegetable stock, 2 large potatoes.hand blender.1 small knob of butter
Prep. Time → 15 min
Cook Time → 30 min
1. 1. peel and chop potatoes into small cubes.
2.Chop up leek and onion into small or medium sizes depending on if you like a chunky soup.
3. Add ingredients to pot along with knob of butter and gently stir for 2-3 minutes.
4. Add boiled water to the pot along with 3 cubes of chicken stock and 2 cubes of vegetable stock and let it simmer for half an hour to 45 minutes, stirring every ten mins or so.
5.leave to cool, then blend with hand blender and add single cream and stir,
6. Serve with crusty bread or roll. :)
