Creamy mushroom penne of Forbidden - Recipefy

180g penne
10ml olive oil
200g white button mushrooms, sliced
half garlic clove, peeled and crushed
75ml dry white wine, optional
100ml creme fraiche
pinch of freshly grated nutmeg (go easy on the nutmeg!!)
salt and freshly ground black pepper, to taste
30ml Parmesan, grated, plus extra to serve
15ml fresh flat-leaf parsley chopped, optional

Prep. Time → 15 min

Cook Time → 20 min

1. bring large pan of water to boil. Add penne and cook according to packet instructions or until tender (about 8-10min)

2. heat oil in frying pan, add mushrooms and saute over high heat until golden (about 5min)

3. add garlic and cook for 1 min while stirring

4. add wine and cook briskly until most of wine has evaporated

5. add creme fraiche then gently reheat until sauce is smooth

6. stir in nutmeg and seasoning, remove from heat

7. drain penne then return to pan

8. stir through mushroom sauce and the Parmesan

9. parsley is for garnish if desired

10. *Serve HOT
