Creamy pesto dip

200g full fat soft cheese (cream cheese)
4 tbsp green pesto
25g parmesan
225g creme fraiche
1 large clove garlic, crushed
2-3 tsp dried italian herb seasoning
* 55g sun dried tomatoes rehydrated/drained, finely chopped

*optional - too much faff for me

Also, I usually double these quantities as my family love this.

Prep. Time → 15 min

Cook Time → 20 min

1. Preheat oven to 180 degrees C

2. Mix half the soft cheese and pesto and put the mixture into the bottom of a small ovenproof dish

3. Mix the remaining soft cheese, parmesan, creme fraiche, garlic and seasoning (*tomatoes if adding)

4. Spread this mixture over the pesto mix

5. Bake for 20 mins until hot, lightly browned and bubbling

6. Serve with pitta bread warmed and cut into triangles (these can be baked to make crispy)
