Creamy rice pudding

1-1/2c cooked brown rice (can substitute white if desired)
2 cups milk, divided
1/3c sugar
1/4tsp salt
1 egg, beaten
2/3c raisins
1Tbs butter
1/2tsp vanilla extract

Prep. Time → 5 min

Cook Time → 25 min

1. In a medium saucepan, combine rice, 1-1/2c milk, sugar, and salt

2. Cook over medium heat until thick and creamy, approx. 15-20 minutes

3. Stir in remaining 1/2c milk, egg, and raisins

4. Cook for 2 minutes, stirring constantly

5. Remove from heat and stir in butter and vanilla

6. Serve warm
