Creamy vanilla rice pudding with mixed berries

1 370ml tin of Fat Free Evaporated Milk (12.5 syns) *
3/4 cup (180ml) of long grain rice
2 1/2 cups of water
1/3 cup of splenda
1 vanilla pod
*NOTE: For those in the UK, there won’t be a fat free version of evaporated milk, but there is a “light” one available. It works out as 22 syns for the whole tin. But the recipe below can easily serve 5 people if you up the rice to 1 cup (240ml), which would still make only 4.5 syns per serving and totally worth it, as it is much more creamier made with evaporated milk instead of skimmed milk.

2. Add the rice along with the water to a saucepan, bring to the boil, reduce heat then cover and simmer until water has been fully absorbed into the rice.
Add the evaporated milk, sweetener and vanilla pod to the rice, slowly bring to the boil, stirring as you do and then reduce to a low heat,cover and simmer for approx 45 mins, until rice is nice and creamy.
Serve topped with fresh mixed berries.
