1 Vanilla Bean or 2 Teaspoons Vanilla Extract (More if you like a strong Vanilla Flavor
1 Quart Heavy Cream
1/2 Cup Vanilla Sugar or Reg Sugar
6 Large Egg Yolks
1/2 Cups Natural Sugar or Brown Sugar

1. Preheat oven to 300 degrees

2. Cut Vanilla Bean lengthwise and us a small spoon to scrape out the seeds, and combine the Cream, Vanilla Seeds and Vanilla Pod in a heavy bottomed saucepan.

3. Bring to Boil

4. Remove from heat, cover, and set aside to steep for 15 minutes. Remove the Pod.

5. In a medium sized bowl, combined the sugar and egg yolks and whisk until well blended.

6. Add the Vanilla Cream and mix well. As you add the warm cream to the eggs keep whisking as you add so you dont scramble the eggs.

7. Place 6 shallow 6-inch round baking dishes in a roasting pan.

8. Pour the Cream mixture into the dishes.

9. Add enough boiling water to the roasting pan to reach halfway up the side of the dishes.

10. Bake just until mixture sets in the center but still trembling, about 30 minutes.

11. Refrigerate for at least 1 hour and up to 24 hours.

12. Removefrom refrigerator, and sprinkle the natural or brown sugar over the top of hte baked cream and melt it either in the broiler or with a torch be careful not to burn the sugar.

13. Return to refrigerator for 15 minutes to cool

14. YOu can serve right away just becareful not to burn yourself on the hot sugar
