Cuban style black beans

2 15 1/2-ounce cans of black beans
1 Tbsp olive oil
1 medium onion, diced (about 1 cup)
1 green bell pepper, diced (about 1 cup)
2 garlic cloves, minced
1/4 tsp dried oregano
1 tsp cumin
3 Tbsp cider vinegar
1/4 cup dry sherry or white wine

1. Drain the beans, put them in a colander, and rinse gently under cold water.

2. Heat the oil in a medium saucepan over a medium flame, add the onion, and cook or 3 minutes. Add the peppers and cook 3 minutes more, stirring occasionally.

3. Add the garlic and cook for 1 minute. Stir in the beans, oregano, cumin, vinegar, sherry, and 1/2 cup of water. Simmer on low for 5 minutes.
