- 100gm (3½oz) dried split red lentils
- Fry Light
- 1tsp black mustard seeds
- 1 medium onion, chopped
- 2.5cm (1 inch) piece of fresh root ginger, grated
- 1 garlic clove, crushed
- 1tsp medium-strength curry powder
- 1tsp turmeric
- salt & freshly ground black pepper
1. Method
1. Put the lentils and 500ml (18fl oz) water in a medium-sized saucepan. Bring to the boil. Cover the pan with a lid and simmer for 10 minutes.
2. Meanwhile, heat a non-stick frying pan sprayed with Fry Light. Stir-fry the black mustard seeds until they pop then add the onion and stir-fry for about 8 until soft and browned.
3. After the lentils have simmered for 10 minutes, stir in the cooked onion and all other ingredients, then simmer for 10 minutes more.
4. Pour the mixture into a food processor or blender and whiz until smooth, adding a little extra water if needed.
5. Season to taste & return to a clean pan to reheat before serving, or chill until ready to use.
