2 cups Yellow split peas
2 onions
canola oil
curry powder

Directions
1. Cook 2 cups yellow split peas in 6 cups of water with 1 tsp. salt until thick and creamy.
2. In a small frying pay, sauté 2 sliced onions in ¼ cup oil until clear.
3. Turn down the heat and add 3-4 tsp. curry powder. Add some more oil so this mixture isn’t dry, optional.
4. Cook the curry powder for a couple of minutes with the onions. Avoid scorching.
5. Add the onions and curry to the split peas. Optional: add vinegar and more salt to taste.
