Down home cheesy bacon chicken
Recipe by2 slices Oscar Mayer bacon, chopped
4 (1 lb) small boneless skinless chicken breast halves
1/4 lb (4 ounces) Velveeta pasteurized prepared cheese product cut into 1/2 inch cubes
2 tablespoons chicken broth
Prep. Time → 10 min
Cook Time → 15 min
1. Cook bacon in a large skillet on medium heat 4 minutes or until crisp
2. Remove bacon and drain on paper towels
3. Discard all but 1 tablespoon of drippings
4. Add chicken to skillet and cook on medium heat 4 to 5 minutes on each side or until done (165 degrees)
5. Meanwhile, combine Velveeta and chicken broth in small sauce pan and cook on medium low heat 2 to 3 minutes or until Velveeta is melted and sauce is well blended, stirring constantly
6. Spoon over chicken and sprinkle with bacon
