Dum aloo/baby potato curry
Recipe byBaby Potatoes/Small Potatoes-20 boiled and peeled
Onion-1 chopped finely
Ginger-garlic paste-1 tspn
Tomato-1 big
Red chilli powder-1 1/2 tspn
Coriander powder-1 tspn
Turmeric powder-1/4 tspn
To roast and grind
Onion-1
Cinnamon 1 small stick
Cardamom-2
Cloves-3
Fennel seeds-1 tspn tspn
Fenugreek seeds-1/4 tspn
Cumin seeds-1 tspn
1. Heat little oil in a pan and roast the boiled potatoes till they become light brown on all sides.Transfer to another bowl.In the same pan saute all the ingredients listed under to roast and grind.Saute till the onions becomes slightly brown.Remove from fire and grind to a smooth paste.
2. Heat oil in another pan and saute chopped onions .Then add ginger garlic paste and saute till the raw smell goes.To this add chopped tomato.Cook till the tomatoes become soft and mushy.Add ground paste and saute for few seconds.Add red chilli powder,coriander powder and turmeric powder.Mix and saute well till oil starts to ooz out.Add 1/4 cup water and roasted potatoes.Sprinkle enough salt,mix well ,cover and cook for 5 mints.Remove from fire and serve hot with rotis.
