Easy chicken balti sw

- Fry Light
- 2 medium onions, chopped finely
- 454gm (1 lb) skinless chicken breasts, cubed
- 1 green pepper, deseeded and diced
- 2tbsp Balti curry powder
- 400gm can chopped tomatoes
- 500gm carton passata
1. Method
1. Heat a frying pan sprayed with Fry Light and gently fry the onions for 5 minutes until beginning to soften.
2. Add the chicken and green pepper, and fry for 5 minutes until the chicken is golden round the edges and white all over. Add the Balti curry powder and fry for a further 2 minutes.
3. Add the tomatoes and passata and bring to the boil. Reduce the heat, cover and simmer gently for 15 minutes until the chicken is tender and cooked through.
4. Serve with new potatoes (taken as a Healthy Extra or Syns) and a selection of free vegetables.
