Easy chicken jalfrezi sw

- Fry Light
- 2 onions, chopped
- 1 green and 1 red pepper, deseeded and cut into chunks
- 4 skinless, boneless chicken breasts, cubed
- 4tsp Jalfrezi curry powder
- 400gm can chopped tomatoes
- 1tsp lemon juice
1. Method
1. In a large pan sprayed with Fry Light, fry the onion and peppers for a few minutes. Add the chicken and cook for a further 5 minutes.
2. Add the curry powder and continue cooking for 2 minutes. Add the tinned tomatoes and lemon juice and stir well.
3. Bring to the boil. Cover and simmer gently for 15 minutes.
4. Serve with pilau rice, remembering to add the Syns accordingly if not following the Extra Easy plan
