Easy green chicken enchiladas
Recipe by1 can (10 oz) green enchilada sauce
1/4 cup cilantro
1/4 cup parsley
2 cloves garlic, minced
2 cups chopped chicken (I buy a whole rotisserie chicken from the grocery store & shred the meat)
1 cup shredded Mexican blend cheese
6 soft tacos (6 inch)
1 lime
I cup sour cream
1 can diced green chiles (6-8 oz)
Prep. Time → 10 min
Cook Time → 25 min
1. Preheat oven 350 degrees
2. Spray 11 x 7 glass dish with cooking spray
3. In the blender place enchilada sauce, cilantro, parsley, lime, & garlic (pulse 30 seconds)
4. Mix chicken & 3/4 cup cheese; divide the mixture among the tortillas, place seam side down
5. Pour the sauce over the the enchiladas
6. Cover; bake 15 minutes
7. Sprinkle the rest of the cheese on the enchiladas
8. Uncover, bake 5-10 minutes
9. Blend the sour cream & diced green chiles in blender or food processor (use this sauce on the side or smother the top of the enchiladas)
