0 likes 0 comments Recipe by Lori McAleer

1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt
1 egg, lightly beaten
1 cup low fat buttermilk
2 tbsp honey

1. *I usually divide batter in half and put 1 half with mashed banana and the other 1/2 with blueberries/strawberries*

2. Whisk ww flour, baking powder, baking soda, and salt in a medium bowl.

3. In a separate small bowl combine egg, buttermilk, and honey.

4. Make a well in the center of the dry ingredients and stir in egg/buttermilk mixture. Allow batter to sit for a few minutes.

5. Preheat grill to 375 or set non-stick frying pan to medium-high heat. Drop batter by 1/4 cupfuls onto griddle/pan. Cook until edges begin to dry and bubbles start appearing in the pancakes. Flip and cook 1-2 minutes more.

6. (I often double this recipe and freeze pancakes for individual servings)
