Eggs florentine

4 thin slices prosciutto
2Tbs olive oil
1 small onion, diced
3 cloves garlic, minced
5c baby spinach
1/4tsp nutmeg
1c cream
2/3c grated Parmesan/Romano
1Tbs salt, plus extra for seasoning
Pepper to taste
8 eggs
2 beefsteak tomatoes, trimmed and cut into 1" thick slices
Prep. Time → 5 min
Cook Time → 15 min
1. Preheat the toaster oven to 400 degrees F
2. Spray toaster pan with cooking spray and arrange the prosciutto in a single layer
3. bake until crispy, about 6-8 minutes
4. Cool completely and crumble into small pieces
5. Meanwhile, heat the olive oil over medium-high heat in a medium skillet
6. Add onion and cook, stirring frequently, until soft, about 5 minutes
7. Add garlic and cook until fragrant, about 30 seconds
8. Add the spinach and nutmeg and cook until the spinach has wilted, about 1-2 minutes
9. Stir in the cream and bring the mixture to a simmer
10. Cook, stirring occasionally, until the mixture thickens slightly, about 5 minutes
11. Remove the pan from the heat and stir in the cheese
12. Season with salt and pepper to taste
13. In a frying pan, cook eggs to liking (scrambled, fried, etc)
14. To serve, place a tomato slice on each plate and season with salt and pepper. Spoon 1/4 of the spinach sauce over the tomato. Top with two eggs and sprinkle with prosciutto
