1 red pepper, cut into strips (or mixture of other colored bell peppers)
1 medium onion, cut into strips
2 (3oz) chicken breasts cut into bit sized pieces
olive oil
2/3c water
2Tbs fajita seasoning (see below)
Seasoning
1Tbs cornstarch
2tsp chili powder
1tsp salt
1tsp paprika
1tsp Splenda
1 crushed chicken bouillon cube
1/2tsp onion powder
1/4tsp garlic powder
1/4tsp cayenne pepper
1/4tsp cumin
Prep. Time → 10 min
Cook Time → 10 min
1. Pour 1-2Tbs olive oil into a medium skillet over medium heat
2. When heated, add onions and cook until they start to caramelize
3. Add peppers and chicken and cook, stirring occasionally until chicken is cooked through
4. Add the water and seasoning
5. Simmer until most of the water has evaporated and the sauce has thickened
6. Serve over brown rice or in whole wheat wraps
