Ingredients
- 8 chicken wings or 1 chicken cut into 8 portions
- 3tbsp tomato puree (1½ Syns)
- 3tbsp brown fruity sauce (3 Syns)
- 1tbsp white wine vinegar
- 1tbsp clear honey (3 Syns)
- Fry Light
- 1 clove garlic, crushed (optional)
- salad leaves, to serve

1. Method
1. Remove the skin from the chicken.

2. To make the barbeque glaze, place the tomato puree, brown fruity sauce, white wine vinegar, honey 6 sprays of Fry Light and garlic in a small bowl. Stir all of the ingredients together until they are thoroughly blended.

3. Brush the barbeque glaze over the chicken and barbeque over hot coals for 15-20 minutes. Turn the chicken portions over occasionally and baste frequently with the barbeque glaze. If the chicken begins to blacken before it is cooked, raise the rack if possible or move the chicken to a cooler part of the barbeque to slow down the cooking.

4. Transfer the barbequed chicken to warmed serving plates and serve with fresh salad leaves.

Note: When poultry is cooked over a very hot barbeque the heat immediately seals in all of the juices, leaving the meat succulent. For this reason, you must make sure that the coals are hot enough before starting to barbeque. This barbeque glaze also makes a very good baste to brush over pork chops.
