Fiesta Crock Pot Chicken of Bridgette - Recipefy

4 Boneless Chicken Breasts

2 cans Diced Rotel Tomatoes (undrained)

1 can (11 or 15 oz.) Corn (drained)

1 Can (14.5 oz.) Black Beans (drained and rinsed)

1 packet Fajita Seasoning **Can be Gluten Free**

1 package (8 oz.) Cream Cheese **Omit to make Dairy Free**

Prep. Time → 10 min

Cook Time → 240 min

1. Spread 1 can of diced tomatoes over bottom of crock pot. Add the chicken breasts in a layer. Sprinkle the fajita season over all chicken breasts. Top with corn, black beans and second can of tomatoes.

2. Cover and cook on high for 4 hours or on low for 6 hours until chicken reaches 160 °.

3. Take breasts out to cutting board and shred, and then add back into pot.

4. Add cream cheese and heat until melted (about 15 minutes)

5. Recipe Notes:
Recipe can be made ahead of time and reheated or portioned out and frozen, but leave cream cheese out of recipe until ready to serve for best results.

6. Scale down: I have made this recipe with as little as 2 chicken breasts and less cook time.

7. Scale up: For full 7 quart pot - used approx 3 sets ingredients. It depends on the size of the chicken breasts and the cans of ingredients. Just make sure to stop with about 1 inch left to top of pot as liquid level will rise during cooking. I assembled as follows: 1 can tomatoes base layer, filled single layer of chicken breasts (about 6), one packet seasoning, 1 can each corn + beans (maybe additional tomatoes), another layer of chicken (about 6), second packet of seasoning, next cans of corn and beans. At this time I didn’t have much space left, so I added the third seasoning packet, topped with additional can of tomatoes and cooked. The third cans of ingredients were added at time of reheat, after the shredding. Full pot of chicken cook time was combination of 2 hours low then turned up to high for about 4 hours. Make sure to cook the chicken to 160 ° by checking with a thermometer. Cook time may vary depending on your crock pot, the thickness of the chicken and the starting temp of the chicken (frozen or room temp). Reheat took about 1 hour on high for full pot - stirring occasionally, adding the cream cheese near serving time.

8. Great option for those school or sports pot-luck dinners. Just bring second crock pot with cooked rice and sides (tortilla wraps, shredded cheddar cheese, sour cream).

9. For gluten free - Check all ingredients to be certain, but I found only the fajita seasoning to be a source and there are many that are premade and gluten free. There are also many recipes to make fajita seasoning if you want to be certain.
