Fish stew (246 cals)
Recipe byDash of olive oil
1 sliced onion
2 sliced celery stalks
3 sliced garlic cloves
2 anchovies (optional!)
Pinch of chilli flakes
2diced plum tomatoes
125ml of white wine
400ml of veggie stock
50g of couscous
250g of white fish
1/2 zest of a lemon
Handful of chopped parsley
Prep. Time → 10 min
Cook Time → 20 min
1. Heat 1 tbsp of olive oil in a pan. Add the onion, celery, garlic, anchovy (if using) and chilli flakes. Season and cook for 10 minutes. Add the tomatoes and cook for another couple of minutes. Pour in the wine and stock and bring to a boil. Cook for 2 minutes then add the couscous. Turn down to a simmer and add the fish. Cover with a lid and cook until the fish is done, about 5-7 minutes. Break the fish into large pieces. Top with lemon zest and parsley
