Focaccia of Laura McCracken - Recipefy

1 1/2 cups warm water
3 tablespoons olive oil (plus additional for drizzling)
1 1/4 teaspoons salt
3 1/2 cups Unbleached All-Purpose Flour
1 tablespoon instant yeast or 1 yeast packet

Prep. Time → 20 min

Cook Time → 90 min

1. Lightly grease a 9" x 13" pan, and drizzle 1 to 2 tablespoons olive oil in the bottom.

2. Add yeast to warm water, sprinkle with small amount of sugar and stir to mix. Then set aside 3 minutes for yeast to activate.

3. Combine all of the ingredients, and mix well with a fork. It will be sticky.

4. Scoop batter out onto a lightly floured surface. Sprinkle flour on top and knead for 3-5 minutes.

5. Shape into an oblong and place in the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it's become puffy.

6. While the dough is rising, preheat the oven to 375°F.

7. Gently poke the dough all over with your index finger or spoon handle.

8. Drizzle it lightly with olive oil, if desired.

9. Bake the bread until it's golden brown, 25 to 30 minutes.

10. Remove it from the oven, wait 5 minutes, then turn it out of the pan onto a rack. Serve warm or at room temperature.
