Fried rice

Ingredients
4 green onions chopped
2 lg eggs
1 tsp salt
Pepper to taste
4 tbsp oil
4 cups cold cooked rice
1-2 tbsp soy sauce

Directions
1. Beat eggs with some of the salt and pepper, heat 2 tbsp oil, scramble eggs lightly, but not too dry. Remove to plate.
2. Add rice to pan with the rest of the oil, add soy sauce. When rice is heated, add egg back to pan, mix thoroughly.
Stir in green onion.
3. (Variations can include adding peas, diced carrots, shredded bok choy, bean sprouts, corn, green beans, or cabbage.)
