Ingredients for Fruit Tea Loaf
500g mixed fruit
2 cups cold tea
200g castor sugar
2 desertspoon marmalade
2 eggs
1lb self raising flour
2 teaspoons mixed spice
Prep. Time → overnight for fruit and tea mixture min
Cook Time → one and a quarter - one and a half hours min

Directions
1. Line 2 loaf tins
Set oven to 150c Fan oven
2. Soak fruit in tea overnight
3. Beat egg with sugar and marmalade until creamy.
Add the fruit and tea mixture, stir well.
Stir in flour and spice.
Divide mixture into the loaf tins
Bake for one and a quarter - one and a half hours
allow to cool before turning out onto a baking rack
