Frozen butter nut squash soup
Recipe by1 onion chopped
2 carrots chopped
2 stalks celery chopped
1 granny smith apple; peeled, cored, & chopped
2 garlic cloves minced
12 oz thawed squash (of course fresh is always better. I made up this recipe for when my favorite winter squash are not in season)
32 oz vegetable broth
3 TB lime
2 tsp salt
1 tsp pepper
1/8 tsp all spice
1/8 tsp nutmeg
1/4 cup cream (or soy creamer)
Prep. Time → 15 min
Cook Time → 25 min
1. Saute onion & garlic until translucent.
2. Add carrots, celery, apple squash, & seasonings.
3. Saute until just the vegetables are just about to soften.
4. Add vegetable broth. Bring to a boil
5. Reduce heat & simmer for 20 minutes
6. In about three batches blend the soup in the blender.
7. Serve hot with crusty bread!
