Ginger date & almond slice
Recipe by3/4 cup glazed ginger
1/2 cup pitted dates
1/2 cup almonds
3/4 cup almond meal
1 cup plain S.R. flour
1/2 cup rice flour
1 tsp mixed spice
1 tsp ground ginger
1 cup castor sugar
1/4 cup brown sugar
1 egg
180g butter
2 tbs milk chocolate chips (for top)
2 tbs raw sugar (for top)
1. Pre-heat oven to 180 degrees. Line leamington tray with baking paper.
2. Sift flour and sugar into bowl - then add almond meal.
3. Chop almonds and then ginger and place into bowl.
4. Coarsely chop dates and place into small bowl. chop butter and place on-top of
dates. Microwave on medium heat until very soft - mix and add to other ingredients. Add beaten egg and mixed spice. Mix all ingredients together.
5. Spread evenly in baking tray, press down evenly. Sprinkle raw sugar lightly on top.
6. Add a chocolate drop every 3 cm.
7. Bake for 30mins or until golden brown.
8. Remove from oven, let stand for 10mins. Gently lift the sides of the baking paper
to remove slice from tin. Placing on wire rack for another 10 mins then transfer to chopping board to be cut into squares.
