Grandma dykhuizen's caramel corn
Recipe by4 qt. popped popcorn
1 c. Brown sugar
½ c. butter
½ c. light corn syrup
½ tsp salt
½ tsp. vanilla
½ tsp. baking soda.
1. Place the popped popcorn in a large bowl sprayed with Pam.
2. In a large, heavy sauce pan, cook the sugar, butter, syrup and salt until boiling, let the mixture boil without stirring, for five minutes.
3. Add:
4. ½ tsp. vanilla
½ tsp. baking soda.
5. The sugar mixture will really bubble up after adding the vanilla and baking soda so be careful.
6. Pour the caramel mixture over the popcorn and stir to combine. Spread the caramel corn on a large sheet pan and bake in oven for 1 hour, stirring every 15 minutes. Let cool. Store in airtight container.
