Greek Bread and Butter Pudding of Calvin Atkinson - Recipefy

1 loaf of Tsoureki Bread sliced (can be substituted by a good sweet bread)
125 g butter
4 Figs thinly sliced
200g of Walnuts roughly chopped
Greek Honey
60g Sultanas
2 eggs
2 egg yolks
40g caster sugar
300ml Double Cream
300ml Milk

Prep. Time → 50 min

Cook Time → 40 min

1. Pre heat an oven to 180°c

2. Spread the butter onto each of the bread slices evenly

3. Grease a baking tray with butter and line the tray with half the bread slices

4. Spread the figs and walnuts across the first layer of bread and drizzle with a good amount of honey without coating the bread too much I recommend 2 to 3 table spoons but do it to your personal taste

5. Repeat this process to create another layer

6. Spread the sultanas on the top layer and put to one side

7. Meanwhile in a mixing bowl whisk the eggs, egg yolks and caster sugar until creamy

8. Now add the double cream and milk to the bowl whisking whilst pouring to create a custard

9. Pour the custard into the tray with the bread and leave for 20 minutes so that the custard can soak into the bread

10. Place in the oven for 40 minutes

11. Let it cool for 10 minutes then serve

12. will last for a couple of days in the fridge
